Southern Nova Scotia’s pristine waters are an exceptional environment for aquatic life. 

The brackish waters of Eel Lake offer D'Eon oysters a sheltered environment that boasts high nutrients. The mix of the ocean and freshwater rivers makes Eel Lake a very unique spot. One of the only brackish areas in all of mainland Nova Scotia that oysters can thrive in.

These tasty bivalves are grown on the surface in floating cages which allows the longest growing season in Eastern Canada. It takes around 3 years for an oyster to reach maturity with this method but also gives them optimal conditions.
